Meet the master: Executive Chef Jorge Chicas
Executive Chef Jorge Chicas initially hails from El Salvador, yet he has since traveled the globe and worked with the industry's most innovative chefs. A graduate of Maryland's L'Academie de Cuisine and New York's Culinary Institute of America, Chicas went on to helm D.C.'s acclaimed Zaytinya restaurant and to work in Beverly Hills as Executive Chef at SLS Hotel, The Bazaar by José Andrés, where his cooking earned four stars from The Los Angeles Times and a spot on GQ's “Best New Restaurants” list. At Red Owl Tavern, Chef Chicas emphasizes the best simple, seasonal flavors in his modern American tavern fare, his expertise touching every dish from the locally-ranched skirt steak with chimichurri sauce to crispy yucca fries.
